Description
We came across the Wonberta mill in our 2016 travels to Ethiopia. We were impressed with the excellent quality of coffee, but more than that, also how well the mill was able to integrate technology with the exacting requirements of specialty coffee. Working with over 500 smallholder farms, those supplying ripe cherries are paid a premium price - to ensure quality. The coffees are fermented in tanks for up to 48 hours and dried slowly over 16 days. Much care is taken, such as covering during the day from direct sunlight and covering during the night to prevent condensation - ensuring a consistent quality. Dried parchment is then sent for grading and processing using both hand sorting and laser colour sorting technology. All these bringing together a beautifully complex coffee.
